Zucchini Fritters are super easy and healthy recipe to make, and are loved by the whole family. You can give these fritters to your baby, your toddler, your kids, AND your fussy eaters. These fritters are wonderfully nutritious, the perfect way to sneak in some veggies for those picky eaters. The best part is, you can serve them as a snack, an appetiser, or lunchbox option. Low in fat and carbs and a good source of protein and fibre that fills you up and keeps blood sugars steady. So basically, yes! These zucchini fritters are a healthy option for all.

My fritter recipe has equal parts healthy fat as it has carbohydrate. This is SO important for regulating your blood sugar, and keeping those sugar cravings at bay.

They are a low GI meal option, and can be served with hummus, or beside salad, or even a yummy coconut yoghurt dressing. The possibilities of adding extra fats into this meal are ENDLESS!

Nutritional Benefits of Zucchini

Zucchini contains a variety of vitamins, minerals, and beneficial plant compounds. Cooked zucchini is particularly high in vitamin A, though raw zucchini contains slightly less.

Zucchini boasts several antioxidants that may provide various health benefits. The highest levels are found in the fruit’s skin.

Zucchini is rich in water and fibre, two compounds which can promote healthy digestion by reducing your risk of constipation and symptoms of various gut disorders.

Zucchini’s fibre may increase insulin sensitivity and stabilise blood sugar levels.

Zucchini and insulin sensitivity

For a second you might have read that and wondered what on earth insulin sensitivity is!

When you have insulin resistance, one of the goals in terms of healing yourself with nutrition is to increase your insulin SENSITIVITY.

Insulin resistance means you need more insulin to keep your blood sugar stable.

Insulin sensitivity is a ‘normal’ response in which cells respond rapidly to insulin, keeping blood sugar stable.

If your ultimate goal is to reduce your pre-diabetes, or type 2 diabetes, or reduce your risk of metabolic disease, one thing to aim for is insulin sensitivity.

To achieve this, creating meals that have a low GI value, low GL value, and high fibre will support insulin sensitivity and balanced blood sugar levels.

How to make Zucchini Fritters

PREPARATION: 10 minutes

COOKING TIME: 30 minutes

SERVES: 6-8

Ingredients

  • 2 – 3 zucchini, grated and excess moisture squeezed out

  • 1 egg, lightly beaten

  • 1spring onion, finely sliced

  • 1⁄2 cup fresh coriander, mint or parsley, coarsely chopped

  • 1 ⁄2 cup self raising flour - or gluten free alternative such as chickpea or almond flour

  • 1 - 2 tbsp. coconut oil or grass- fed ghee

Optional: 1⁄4 cup grated parmesan cheese

Method - How to cook zucchini fritters

  • In a large bowl, place the zucchini, flour, spring onion, fresh herbs, egg (and parmesan). Mix to combine.

  • Heat a frying pan on medium to high heat and and add the coconut oil or ghee.

  • To make your fritters, add one tablespoon of batter at a time onto the pan, spreading them evenly apart, fitting as many as you can.

  • Cook for 2-3 minutes on each side until golden brown, adjusting the heat if you need.

  • Repeat steps 4 - 5 with the remaining batter.

What can I serve my Zucchini Fritters with?

Zucchini fritters can be an easy lunchbox snack on their own. They can also be as part of a full meal! You can have them alongside some protein - for example with eggs for breakfast, or with meat for dinner.

Coconut or cashew yoghurt dressing is a lovely way to garnish your fritters while adding some healthy fats to your meal (hello balanced blood sugar!).

You could also put inside a veggie burger for a burger night, with some tomato relish, bread and cheese (or vegan cheese).

There really are unlimited options for zucchini fritters. They are a low-GI, high-fibre choice for any meal.

How to freeze Zucchini Fritters?

These zucchini fritters freeze beautifully and can be stored up to 3 months in deep freeze. Simply wrap into your chosen portion sizes, and place into the freezer.
