A few dishes with a bit more depth may be in order. You’ll know your meal was expertly planned when your lucky diners are left satisfied but not green around the gills when they finally push their plates away.

Perhaps the trickiest part of planning your holiday ‘symphony’ is dessert. After waiting patiently all year to taste seasonal flavors, it’s easy to go overboard. However, after a heavy turkey meal, your elaborate pie and cake creations are almost guaranteed to be unappreciated by your diners.

Enter the Cranberry Cream Cheese Pie…

This year, refresh your guest’s palates with this pleasantly tart cranberry pie. Don’t be fooled by the pre-made crust and no-bake technique – the flavor is very elegant but not in anyway overwhelming. It is simple to prepare, deceptively quick and the ideal topper to all those notoriously decadent holiday feasts.

Ingredients

  • 1 8 oz package of cream cheese
  • 1 tbsp of margarine
  • 1 tsp of pure vanilla extract
  • 1 cup icing sugar
  • 1 3 oz package of raspberry flavored Jello powder
  • 1 cup boiling water
  • 1 14.5 oz can of whole berry cranberry sauce
  • 1/3 cups chopped walnuts
  • 1 9 inch prepared graham cracker crust

Step One

After allowing the cream cheese to soften at room temperature, combine it with the margarine, icing sugar and vanilla in a mixing bowl. If you don’t have real vanilla, artificial extract will do but there truly is a remarkable difference in flavor.

Step Two

Using the whisk attachment on your stand mixer, whirl the ingredients together at medium speed. A hand blender works just as well and failing that, some good old fashioned elbow grease will get the job done.

Step Three

Your cream cheese mixture is ready when it is light, fluffy and lump-free.

Step Four

Carefully smooth the mixture into your graham pie shell. Ensure that the layer is of even thickness for a prettier final product.

Step Five

Using a medium sized bowl, combine the jello powder with the boiling water. Stir immediately to distribute the gelatin properly.

Step Six

Add the cranberry sauce and walnuts, carefully combining them to ensure that the berries are well distributed and the nuts are evenly incorporated.

Step Seven

Smooth the cranberry mixture onto the cream cheese layer – remembering that we eat with our eyes first!

Step Eight

Festive and bright, your cranberry pie is ready to go into the refrigerator for 3-4 hours in order for it to set up properly.

Like pointsettas and snow, but far more delicious, this is perhaps one of the easiest holiday deserts you’ll ever make. What it lacks in prep time however, it makes up in taste. Sophisticated, plesantly tart and undeniably pretty, this pie is sure to make it into your permanent treat roster.
