There’s nothing quite so satisfying as a warm chocolate chip cookie.

​It’s the quintessential comfort food dessert that can immediately brighten your day.

​And although homemade chocolate chip cookies are not difficult to make, they do take a bit of time.

So one of my favorite shortcuts has been to start makingBisquick chocolate chip cookies!

Using Bisquick mix is an easy way to save time, because there’s less scooping and measuring of ingredients. And the taste is still incredible!

Soft and Chewy Chocolate Chip Cookies with Bisquick

Having a few shortcut cookie recipes up your sleeve can be really helpful for those days when you need to satisfy your sweet tooth.

That’s one reason why I enjoy making brownie mix cookies, cake mix peanut butter cookies, and these easy chocolate chip cookies.

Most people associate Betty Crocker Bisquick baking mix with making biscuits or pancakes, but it’s actually far more versatile than that!

I’ve used it to make muffins, dumplings, and cookies.

Using a baking mix to make chocolate chip cookies eliminates the need to have some other pantry items on hand, and saves a little bit of time, too!

For this Bisquick chocolate chip cookies recipe, the baking mix is essentially a substitute for flour and leaveners in traditional chocolate chip cookies, so it’s really simple to incorporate into cookie dough.

The result? Deliciously chewy cookies with plenty of melty chocolate morsels inside!

This is a great kid-friendly shortcut that’s great for involving little ones in the kitchen. It’s become one of our favorite recipes!

How to Make Easy Bisquick Chocolate Chip Cookies

It’s super easy to make these cookies with just a few ingredients.

Ingredients You’ll Need:

  • Unsalted butter
  • Light brown sugar
  • Granulated white sugar
  • Eggs
  • Vanilla extract
  • Bisquick baking mix
  • Semisweet chocolate chips

How to Make it:

Prepare oven and baking sheet. Heat oven to 375F and prepare a baking sheet.

I line mine with parchment paper or a silicone mat for easy cleanup, but you can also use an ungreased cookie sheet if you’d like.

Cream butter and sugar.Then, you’ll mix butter and both sugars in the bowl of a stand mixer, or in a large bowl with a handheld electric mixer..

Next, add in the egg, egg yolk, and vanilla extract.

Mix until incorporated.

Add dry ingredients.Next, with the mixer on low speed, you’ll add the Bisquick baking mix, just until combined.

Last, add in the chocolate chips and stir to combine.

You don’t want to over-mix here. Just enough to incorporate the chips!

Bake and cool.Scoop out the dough with a 1/4 cup measuring cup.

Roll the dough into a ball, then tear the ball in half. Place each half on a prepared baking sheet, with the torn edges facing up.

You can also just scool rounded tablespoons of cookie dough, then drop dough onto the baking sheet.

Or you can roll dough into balls–whatever is easiest for you!

Bake at 375F for about 9-11 minutes, until the edges are starting to turn golden brown but the centers of the tops are still soft.

Let cool on the pan for a few minutes before transferring to a wire rack.

Feel free to enjoy warm with a glass of milk, or let them stay on the cooling rack until they’re completely cool.

Notes and Adaptations:

  • I have not personally tried this with the gluten-free Bisquick mix or the Heart Smart Mix, so I don’t know for sure how it would work. If you try it, I’d love to know how it turned out for you!

  • I used semisweet chocolate chips for that classic cookie flavor, but you could use milk chocolate chips, dark chocolate chips, peanut butter chips, white chocolate chips, and more.

These soft and chewy chocolate chip cookies are made with Bisquick baking mix, for an easy shortcut recipe!

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup white sugar
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla extract
  • 2 1/2 cups Bisquick baking mix
  • 1 1/4 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 375F and line a baking sheet with a silicone mat or parchment paper.
  2. In the bowl of a stand mixer, cream together the butter and both sugars. Add egg, egg yolk, and vanilla and mix to combine.
  3. With the mixer on low speed, gradually add in the Bisquick baking mix, mixing just until combined.
  4. Add chocolate chips and stir to combine.
  5. Scoop out a scant 1/4 cup of dough and roll into a ball. Tear the ball in half, placing each half on the prepared baking sheet with its torn edges facing up. Repeat.
  6. Bake for 9-11 minutes, until beginning to turn golden-brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a cooling rack.
