I’m a big fan of frozen desserts. Down here in Texas, you tend to become a fan of anything cold. After all, the summers are searing and the winters are more like early spring in a lot of other parts of the country. I’ve been serving up frozen desserts and cold drinks for years at all of our parties and even just on weekday evenings to help beat the heat for as long as I can remember. I’ve made everything from pudding pies to ice cream cakes, slushies, and everything in between.

Lately, though, I’ve been making this frozen raspberry dessert quite a bit. My family loves the fresh raspberry flavor and creamy, cold goodness. I love that it doesn’t take a ton of work, either!

Every time I serve it, it goes fast. Really fast. In fact, I’ll often make a double batch if I’m bringing it to any kind of get-together.

The flavors of this frozen raspberry dessert are just so fantastic. It’s full of fresh raspberries – a whopping three cups, in fact! It also uses heavy whipping cream, powdered sugar, cream cheese, sweetened condensed milk, and Cool Whip to create a rich, creamy, fruity dessert that’s always welcome. I call it a frozen dessert, but it’s almost like a no-churn ice cream pie. It’s one of the most satisfying desserts in my lineup, and I’m frequently asked to make it during the summer.

I have zero tips on this one. It’s just that easy. The entire process is ridiculously simple. You’ll be baking your graham cracker crust, but after that, the entire recipe is simply a matter of mixing the ingredients, layering them, and freezing. That’s all there is to it! I actually sat here trying to think of tips that I could give you to make things easier, but the only way this recipe could be easier is if you had someone else make it for you.

Well, okay. There’s one tip. Really crush up those graham crackers when you make the crust. You want them as finely crushed as possible so that the entire thing binds really well and gives you a nice crusty texture. Okay. That’s it!

How To Make This Frozen Raspberry Dessert

Step-by-Step Instructions

Step 1 – Prep

Preheat oven to 350° and spray a 9×13 baking dish with non-stick cooking spray. Set aside.

Step 2 – Making the Crust

Place graham crackers in a food processor or a large Ziploc baggie to crush. In a medium bowl, add crushed graham crackers, melted butter, and sugar and mix until well combined. Place in the bottom of the prepared baking dish and press down evenly with the bottom of a measuring cup. Bake for 10-12 minutes. Let cool completely.

Step 3 – Making the Raspberry Filling

Add 3 cups of raspberries to Vitamix, blender, or food processor and blend until smooth. In a medium bowl, beat heavy cream until stiff peaks form. In a separate large bowl, beat cream cheese and powdered sugar together. Add sweetened condensed milk, vanilla, and blended raspberries. Mix until well combined. Add the whipped cream and beat until combined. Fold in chopped raspberries.

Step 4 – Assembling the Dessert

Spread mixture over cooled graham cracker crust and smooth evenly. Top with cool whip, crushed graham crackers, and fresh raspberries. Cover with plastic wrap and place in the freezer for 3-4 hours or until the filling has set.
