Legend has it that the original Gnocchi Parisienne recipe was created for Napolean’s wife, and once you taste it, you’ll understand. It’s the perfect mixture of decadence and simplicity. These little pillowy dumplings are lightly crisped on the outside, and melt in your mouth soft on the inside.

The key is in the dough. Though Italian gnocchi is made with potatoes, the French version is made with a pâte à choux - the same dough that’s used in those gloriously airy pastries that you find in little Parisienne cafes. It's delicate, elegant, but oh so easy to make.

DOUGH

  • 1 tsp salt
  • ¼ cup of butter
  • 1 cup water of water
  • 3 eggs
  • ¼ cup of Parmesan finely grated
  • 1 cup all-purpose flour

TO SERVE

  • 2 tbsp butter
  • ½ a lemon
  • 2 tbsp finely chopped parsley
  • 2 tbsp grated parmesan

Instructions

  • Pour the water into a pan over medium heat, and add the butter and salt. Cook until the butter is melted, then remove from heat.

  • Whisk in the flour and parmesan, mixing vigorously until it forms a dough.

  • Allow the mixture to cool for a few minutes, then beat in the three eggs. Scoop the mixture into a piping bag fitted with a 1-inch tip.

  • Place a pot of water on the stove. Salt it generously, then bring the water to a simmer.
